ingredients
mixed salad greens--avoid head lettuce it is lame and has very little nutritional value.
Pork tenderloin
jerk marinade-I buy Walkerswood or make it myself
4 hard boiled eggs
tomato in season otherwise use mandarin oranges from the can
Caesar dressing
homemade bacon bits
cucumber
Jerk marinade recipe--garlic, olive oil, green onion, mustard, ground clove, habanero peppers, grated lemon peel, orange juice
Mix---3 tablespoons yellow or brown mustard
3 toes garlic
5 tablespoons olive oil
1/4 teaspoon of ground clove
1/2 cup orange juice
4 habanero peppers finely chopped--very hot!
1 teaspoon of lemon zest
pinch of salt
3 green onions finely chopped
Marinate pork tenderloin overnight in this mixture
Put salad ingredients together and put grilled pork tenderloin thinly slices onto salad, add sliced hard boiled eggs, bacon bits and top with Caesar dressing------------A great meal/salad
