Sweet potatoes are one of the most nutritious foods out there here is a simple and tasty recipe
2 large sweet potatoes
1/2 cup orange juice
Sprig of fresh rosemary
I red onion--chopped
dried cherries or dried cranberries
1/4 cup olive oil xxxxtra virgin
salt/ pepper to taste
peel sweet potatoes cut them into large chunks--boil potatoes for approximately 5 minutes or until potatoes are starting to soften but are still somewhat firm.
after boiling drain off all water and put potatoes back into pot--pour 1/2 cup of orange juice over hot potatoes-let them sit
In a large frying pan saute sprig of rosemary and chopped onion until translucent, add sweetpotatoes and orange juice to hot oil and onion mixture continue to saute until orange juice is thickened add dried cherries serve hot--delicious!
