incredible omelet
Here is a great omelet, it makes a great breakfast or dinner.
Ingredients:
5 eggs
Handful of Fresh spinach
1 small zucchini
green onion
1 cup of leftover grilled meat shredded--chicken, pork or beef work well.
1 teaspoon of garlic-chili sauce
sun dried tomatoes
tablespoon of olive oil
Scramble five eggs with a splash of milk
Chop zucchini, onions, sundried tomatoes, and meat
Stir fry -onions, spinach,sundried tomatoes, zucchini in olive oil until slightly softened
Add meat and chili sauce continue until everything is hot
Take mixture out of pan
add a bit more olive oil and pour in eggs
add meat / veggie mixture to eggs and fold
This is a great omelet
